How to Make Pesto Cavatappi

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions. Drain and set aside.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the mushrooms and diced tomatoes.
  3. Cook the vegetables for about 5 minutes, until the mushrooms begin to brown and the tomatoes soften.
  4. Pour in the chicken broth and heavy cream, bring to a simmer, and cook 2–3 minutes until the sauce thickens slightly.
  5. Remove the skillet from heat and stir in the pesto until fully combined.
  6. Toss the sauce with the cooked pasta, then top with shredded Parmesan and serve.
