Cilantro-Lime Rice Recipe: Flavorful Mexican-Style Side Dish

This Cilantro-Lime Rice is a healthy, versatile side that pairs well with chicken, beef or salmon. Adding rice to your meals is an easy way to include complex carbohydrates and fiber—this recipe uses brown rice for extra nutrition, but it works with white rice too.

I generally cook at home with brown rice because it retains more of its natural nutrients, but I don’t worry about white rice when dining out. Brown rice has only the outermost layer removed, so it keeps more fiber and vitamins than fully processed white rice.

I like using a rice cooker for consistent results, especially with brown rice, but you can cook this on the stove following the package directions. If you prefer extra ease, a rice cooker will make the process nearly hands-off.

Cilantro-Lime Rice

Ingredients

  • 2 cups brown rice
  • 4 cups water
  • 2 teaspoons sea salt
  • 1 handful chopped cilantro
  • 2 limes

Instructions

  1. Combine rice, water and salt in a rice cooker or a stovetop pot.
  2. Cook according to package directions until tender.
  3. Chop the cilantro and roll the limes on the counter to loosen the juice, then cut and squeeze.
  4. When the rice is cooked, stir in the chopped cilantro and the fresh lime juice.
  5. Fluff, taste and adjust salt or lime if needed. Serve warm.

Cilantro-Lime Rice

Ingredients

  • 2 cups brown rice
  • 4 cups water
  • 2 teaspoons sea salt
  • 1 handful chopped cilantro
  • 2 limes

Instructions

  • Add rice, water and salt to a rice cooker or stovetop pot.
  • Cook according to the package directions until the rice is tender.
  • Chop cilantro and squeeze fresh lime juice.
  • Stir cilantro and lime juice into the hot rice, then fluff and taste for seasoning.
  • Serve warm and enjoy.
