Description

This two-cheese mimolette & cheddar summer salad is packed with fresh ingredients and bold flavor. It’s quick to make and destined to become a favorite.


Ingredients

  • 4 handfuls of arugula
  • 1/2 small cucumber, thinly sliced
  • 1 large carrot, grated lengthwise
  • 2 medium tomatoes, diced
  • 1/2 cup cooked lentils
  • 1/4 cup Dutch mimolette, diced
  • 1/4 cup aged cheddar, diced
  • 4 walnuts, crushed
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp classic French vinaigrette

Instructions

  1. Combine the arugula, cucumber, carrot, tomatoes, lentils, mimolette, cheddar, walnuts and parsley in a large bowl.
  2. Drizzle with the French vinaigrette and toss to coat evenly.
