These Pineapple Lime Chicken Kebabs are slightly tart and incredibly juicy — perfect on an indoor griller or cooked outdoors.

I’m currently loving the combination of lime and pineapple. It brightens dishes with tang and sweetness, and it works wonderfully with chicken. These Pineapple Lime Chicken Kebabs are a healthy, flavorful option for weeknight dinners or weekend barbecues.

This recipe had been sitting in my drafts for some time, but with grilling season in full swing it felt right to share. The kebabs are simple to prepare and versatile: cook them on a health griller indoors or over coals outside.

Boneless chicken breasts don’t strictly need long marinating, but letting them sit in the honey-lime marinade improves the flavor and keeps the meat juicy. If you’re short on time, simply baste the kebabs frequently with the marinade while they cook.

Note: marinades with honey or other sweet ingredients can burn quickly. Grill over medium heat or over coals to avoid charring while still getting a nice glaze.

Ingredients
- 3 Chicken fillets, large, cubed (deboned breasts)
- 3 TB Low-salt soy sauce
- 2 TB Honey
- 1 TB Extra-virgin olive oil
- 1/4 cup Fresh lime juice
- 2 t Fresh garlic, crushed
- 2 TB Parsley, chopped
- Salt and black pepper, to taste
- 1 1/2 cups Pineapple, cubed
Instructions
- Mix all ingredients except the pineapple in a bowl. Marinate the chicken for 1 hour.
- Use long water-soaked wooden skewers or steel skewers. Thread chicken and pineapple alternately onto the skewers.
- Place the kebabs on a medium-hot griller (indoor griller or barbecue). Cook until done, turning and basting regularly with the leftover marinade.
- Serve immediately.
