Ingredients

Strawberry Syrup:

  • 1 cup whole fresh strawberries, or frozen hulled and sliced
  • ½ cup granulated sugar
  • 1/2 cup water

To Rim Glasses (optional):

  • 2 tablespoons caster/powdered sugar you won’t use this much, but it helps to rim the glasses
  • 4 whole strawberries sliced in half for rimming and garnish

For Mojitos:

  • 1 handful mint leaves reserve extra to garnish
  • 4 whole strawberries sliced and divided
  • 2 medium limes divided
  • 1/2 cup white coconut rum divided
  • 1 cup ice cubes
  • 1/2 cup sparkling water or club soda

Instructions

For the strawberry syrup:

  • Combine strawberries, sugar and water in a small saucepan. Bring to the boil, then reduce heat and simmer gently while stirring until the sugar dissolves and a syrup forms. Remove from heat, allow to cool fully, and strain out the strawberry pieces. (Reserve the softened strawberries to enjoy with yogurt or ice cream.)

For the mojitos:

  • Wet the rim of each glass with a halved strawberry and dip into sugar or fine coconut if desired; reserve the strawberries for garnish.
  • Divide mint leaves and strawberry slices between four glasses. Juice one lime and add about 1 teaspoon of lime juice to each glass. Gently muddle the strawberries, mint and lime until the strawberries begin to macerate. Add 2 tablespoons of the strained, cooled syrup to each glass.
  • Cut the remaining lime into wedges and add two wedges per glass. Pour in the rum (about 2 tablespoons per glass), add ice and top with sparkling water or club soda. Stir gently and garnish with extra mint leaves.

Notes

To make a non-alcoholic mocktail, substitute coconut water for the coconut rum and proceed the same way.
