Ingredients

  • 2 potatoes, cut lengthwise, about 1/4 inch thick
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 4 cloves garlic, mashed
  • 1/2 teaspoon Cajun spice

Instructions

  • Cut the potatoes into long fry-like pieces and boil for about 5 minutes, or until just tender. Don’t overcook.
  • Drain the potatoes and spread them on a paper towel for about 10 minutes to remove excess moisture.
  • In a small bowl, mash the garlic and mix with the olive oil until combined.
  • Toss the par-cooked potatoes with the garlic-oil mixture, Cajun spice, and salt until evenly coated.
  • Arrange the potatoes in a single layer on a baking sheet so they roast evenly.
  • Bake at 350°F (175°C) for 10 minutes, then broil for 2–3 minutes to brown and crisp the edges. Broil longer if you prefer extra crispiness—watch closely to avoid burning.
