Breakfast Tacos for a Crowd

Ask any group—teens, adults, or a mixed crowd—what they’d like to eat and chances are you’ll hear “tacos” (and maybe “pizza”). Breakfast tacos are a crowd-pleasing, familiar favorite any time of day. These are not just scrambled eggs and bacon on a tortilla. They combine savory breakfast sausage, fluffy cheesy eggs, crisp hash browns, and a tangy Avocado Chili Cream sauce that elevates every bite.

These tacos are highly customizable and very practical for serving groups because they require minimal assembly—no rolling or wrapping. The hash browns bake until crisp and golden, the eggs stay light and cheesy, and the sauce can be made ahead for convenience. There’s under 30 minutes of prep and roughly 45 minutes of cook time, making this a realistic large-group meal.

Warming corn tortillas is worth the effort: it releases their savory, slightly sweet corn flavor, brightens any lime notes, and makes them more flexible so they won’t crack while guests eat. If you have griddle space, a quick 30-second toast on the griddle is ideal before keeping them warm in the oven or a slow cooker.

Breakfast Tacos

Why this works for feeding a crowd

This recipe is written to serve 24 people at two tacos each (48 tacos total). Scale up by making multiple batches of the components—hash browns, sausage, eggs, and sauce. Unlike burritos, these tacos require no individual wrapping, so serving is faster and less labor intensive. Make the sauce the day before and keep eggs and hash browns warm in slow cookers if needed.

Recipe Overview

Prep time: 30 minutes • Cook time: 45 minutes • Total: 1 hour 15 minutes • Servings: 24 people

Ingredients

  • 48 flour or corn tortillas

For the Avocado Chili Cream Sauce

  • 4 large avocados, pitted and peeled (about 12½ oz)
  • 2 tablespoons canned mild diced green chiles
  • 4 tablespoons lime juice
  • ½ cup sour cream (about 2 oz)
  • 6 tablespoons mayonnaise (about 1½ oz)
  • 2 cloves garlic, chopped
  • ¼ teaspoon table salt
  • ½ teaspoon onion powder

For the Cheesy Scrambled Eggs

  • 2 tablespoons butter
  • 2 dozen eggs
  • 1 cup evaporated milk
  • 2 teaspoons seasoned salt (such as Lawry’s)
  • 8 ounces shredded mild cheddar cheese

For the Hash Browns

  • 1 (30–32 oz) bag frozen hash browns
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 tablespoon seasoned salt
  • ½ cup vegetable oil
  • 4 tablespoons salted butter

For the Sausage

  • 2 pounds breakfast sausage (mild is recommended)

Equipment

  • 9 x 13 inch baking dish
  • 13 x 18 inch half sheet pan
  • Large frying pan
  • 2 (6-quart) slow cookers if holding food ahead
  • Plastic squeeze bottles for the sauce (optional)

Instructions

#1 – Day before: Make the Avocado Chili Cream Sauce

  1. Combine all sauce ingredients in a blender and process until smooth. Chill overnight or up to two days for best flavor.

#2 – One to two hours before serving: Make the cheesy scrambled eggs

  1. Preheat oven to 350°F.
  2. Grease a 9 x 13 inch baking dish with butter.
  3. Whisk eggs with evaporated milk, seasoned salt, and cheese. Pour into prepared dish.
  4. Bake uncovered 15 minutes, stir; bake another 10 minutes, stir. Continue stirring every 2 minutes until eggs are set, about 30–35 minutes total. If baking multiple dishes, add extra time as needed.
  5. Transfer finished batches to a 6-quart slow cooker set to Low to hold up to 2 hours. Fluff gently before serving.

#3 – One to two hours prior to serving: Cook hash browns and fry sausage

  1. Preheat oven to 400°F.
  2. Toss hash browns with salt, garlic powder, seasoned salt, and oil. Spread on a parchment-lined sheet pan and dot with butter.
  3. Bake 45 minutes until golden brown. Keep warm in a slow cooker on Low or in a 200°F oven for up to an hour.
  4. In a large skillet over medium heat, brown sausage until cooked through, about 15 minutes.

Serving Suggestions and Notes

Arrange the serving table in this order for fastest flow: plates, warmed tortillas, hash browns, cheesy scrambled eggs, sausage, and the Avocado Chili Cream sauce in squeeze bottles or bowls. Provide utensils and napkins nearby. Label the sauce so guests know what’s inside.
