Spring is approaching, and for many in the Midwest, St. Patrick’s Day marks its unofficial arrival. Regardless of the weather, people don their brightest green and celebrate, often declaring themselves Irish for the day. No St. Paddy’s celebration is complete without a festive drink—alcoholic or alcohol-free. Below are two simple, customizable recipes to elevate your cocktails and mocktails this season.

Homemade Irish Cream

If you prefer a lighter version, swap heavy cream for half-and-half or a lower-fat alternative; it remains rich while being a little less heavy. The following recipe is a straightforward base you can adjust—add more or less whiskey, tweak the chocolate or coffee, or try different extracts to create your signature blend.

What You Will Need:

  • 1 2/3 cups Irish whiskey (feel free to increase to 2 cups if you prefer)
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup cream or half-and-half (your choice)
  • 1 tsp instant coffee
  • 1 tbsp chocolate syrup
  • 1 tsp vanilla extract
  • 1 tsp coconut and/or almond extract (optional)
  • Blender or immersion blender

How to Assemble:

  1. Measure all ingredients into a blender or a pitcher if you’re using an immersion blender.
  2. Blend for about 30 seconds, or until the instant coffee dissolves and the mixture is smooth.
  3. Taste and adjust: add more whiskey if the mixture is too sweet, or a touch more chocolate or coffee to suit your preference.
  4. Pour into bottles and refrigerate; the homemade Irish cream will keep for up to two months. (Though it’s likely to be enjoyed long before then.)

Fresh Mint Simple Syrup

Fresh mint complements Irish cream beautifully, and a mint syrup is a versatile ingredient to have on hand through spring and summer. Use it for mint juleps, mojitos, cucumber-mint martinis, or stirred into hot cocoa, milk, or milkshakes for a kid-friendly mocktail twist.

What You Will Need:

  • 2 1/2 cups fresh mint leaves
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups water
  • Large saucepan
  • Sieve or cheesecloth

How to Assemble:

  1. Combine equal parts sugar and water in a saucepan. If you prefer a less sweet syrup, reduce the sugar and increase the water proportionally (for example, 2/3 cup water to 1/3 cup sugar).
  2. Add the fresh mint leaves to the saucepan.
  3. Heat gently on low, stirring until the sugar fully dissolves—do not boil.
  4. Remove from heat and let the mixture cool with the mint leaves still steeping. For a stronger mint flavor, refrigerate and let it steep overnight.
  5. Strain the cooled syrup through a sieve or several layers of cheesecloth to remove all mint bits.
  6. If desired, add a few drops of green food coloring for a festive look; otherwise leave it clear for broader uses.
  7. Pour the syrup into glass bottles or jars and store refrigerated.

I kept one bottle dye-free to use in fruity spring drinks, and tinted another green just for St. Patrick’s Day.
