Vegetarian Haystacks Recipe: Flavorful Meatless Taco Bowls

This Vegetarian Haystack is an ideal Meatless Monday meal — simple to prepare, easy to customize, and fun to assemble.

If you haven’t tried haystacks before, think of them as a cross between a taco salad and nachos: a base of chips topped with layers of fresh vegetables, beans, cheese and other toppings. They’re quick to put together and perfect for feeding a crowd or for casual family meals.

I grew up in a Seventh-day Adventist household where haystacks were a regular favorite at church gatherings, camping trips, and family meals. Because many meals in that community are vegetarian, the haystacks I learned to make were meat-free. I still prefer them this way — the beans provide satisfying protein, and the combination of textures and flavors makes for a welcome break from meat-focused dishes.

One of the best things about haystacks is how customizable they are. Arrange the ingredients in bowls on the table and let everyone build their own dish. It’s easier for the cook and everyone gets exactly what they want.

How to Make Vegetarian Haystacks:

Thin the sour cream by whisking it together with the cold water until smooth. Then assemble haystacks using your preferred order of ingredients.

Ingredients

  • 20 oz tortilla chips
  • 4 cups shredded romaine lettuce
  • 3 tomatoes, chopped
  • 2 cups black or pinto beans
  • 1/2 cup sour cream
  • 2 tablespoons cold water
  • 5 oz queso fresco, crumbled
  • Salsa
  • 3/4 cup sliced black olives

Optional:

  • Avocado slices

Instructions

  • Combine the sour cream and cold water and whisk until smooth. Arrange chips on plates or a platter and let everyone layer their toppings in any order they prefer.
