Crispy Air Fryer Zucchini Chips Recipe

I used to sauté zucchini with other vegetables, which is great, but after switching to a healthier routine I wanted something more exciting. These zucchini chips transformed how I eat veggies — they crisp up beautifully in the air fryer without the greasiness of traditional frying.

If you have a mandoline, it’s a huge time-saver for getting even, thin slices; if not, a sharp knife will do. Serve the chips as a side or snack alongside air-fried salmon, coconut shrimp, or other lean mains.

Air Fryer Zucchini Chips

These make a satisfying, low-point side for weeknight dinners or a crunchy snack to share.

Ingredients for Air Fryer Zucchini Chips:

  • 2 medium zucchini
  • 1 egg, beaten
  • 1/2 cup panko breadcrumbs
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Oil spray or soft butter (Parkay can be used)

How to Make Air Fryer Zucchini Chips

  1. Wash the zucchini and trim the ends. Slice into thin, even rounds — about 1/8 to 1/4 inch thick. A mandoline makes this quick and consistent.
  2. In a shallow bowl, beat the egg. In a separate bowl, combine the panko, paprika, salt, and pepper.
  3. Dip each zucchini slice into the beaten egg, letting any excess drip off, then press into the panko mixture to coat both sides.
  4. Arrange the breaded slices in a single layer in your air fryer basket or on the pan. Avoid overlapping so they crisp evenly. Lightly spray the tops with oil or brush with a little softened butter.
  5. Air fry at 400°F (204°C) for about 8–12 minutes, flipping once halfway through, until the chips are golden and crisp. Cooking time varies by air fryer and slice thickness, so watch closely near the end.

Cut the zucchini into circles for chips.

Combine the dry ingredients in a bowl.

Dredge each slice in beaten egg, then press into the panko mixture.

Place in a single layer in the air fryer and cook at 400°F until crispy.
