Sundays always seem to arrive too quickly. I began the week with several ideas for this week’s Great Bloggers’ Bake Off, but in the end I made just one entry. This recipe is perfect for anyone who wants something quick, simple and made from pantry staples. I used a pack of HobNobs, but Digestives, Malted Milk or Shorties would work just as well.
The World’s Easiest Caramel Apple Traybake

Ingredients
- 1 pack of HobNob biscuits (or similar)
- 150 g melted butter
- 1 egg, beaten
- 2 handfuls mini marshmallows
- 2 handfuls Rice Krispies
- 1 apple, chopped into small cubes
- 2 tbsp plain flour
- 1 tin caramel topping
Instructions
- Preheat the oven to 160°C (fan).
- Line a 9″ (23cm) square tin with baking parchment or tin foil.
- Crush the biscuits finely in a large bowl.
- Stir in the melted butter, beaten egg, Rice Krispies and mini marshmallows until evenly combined.
- Press the mixture into the prepared tin and bake for 15 minutes.
- Toss the apple cubes with the flour to coat, then scatter them evenly over the baked biscuit base.
- Spread the tin of caramel topping over the apples.
- Return to the oven and bake for a further 25 minutes, until set and bubbling at the edges.
- Cut into squares while still warm and soft.
- Refrigerate for about 2 hours to firm up before serving.
