Traditional fast-food nuggets are typically coated in wheat flour and fried in oils that can leave you wondering what’s actually in them. That’s why I prefer making them at home: you control every ingredient, and they can be a healthier option.

Baked chicken nuggets versus fried chicken nuggets?
Baked-only nuggets can be missing that satisfying fried coating, while fully frying can make it hard to cook the chicken through without burning the exterior. Under-cooked chicken is a real concern, so I wanted a reliable method that yields crispy, fully-cooked nuggets without a lot of wasted oil.
The solution I use is a combination: a quick pan-sear to form a golden crust, then a finish in the oven. This hybrid method gives great texture and ensures the inside reaches the proper temperature — all with less oil than deep frying and only one pan to clean.
A note on oil
Choosing an oil with a suitable smoke point is important when cooking at medium-high heat. Oils break down and can lose benefits or develop off-flavors when heated beyond their limits.
Refined coconut oil is a dependable option here: it has a higher smoke point (around 400°F) and, when refined, won’t impart a coconut taste. Avocado oil is another excellent choice — it tolerates high heat well and is lower in saturated fats.

How to make chicken nuggets without breadcrumbs
This recipe uses the classic breading steps without traditional breadcrumbs: an egg wash followed by a gluten-free flour blend. Preparing the flour mixture on a large plate and coating each piece individually makes the process tidy and efficient.
If you already follow a gluten-free diet and keep a homemade flour blend on hand, you’ll likely have the ingredients ready to go.

Ingredients
- 1 lb chicken breast or thigh, boneless & skinless, cut into 2-inch pieces
- 1 egg
Flour mixture
- ¼ cup almond flour
- ¼ cup tapioca flour
- ¼ cup brown rice flour
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
Instructions
- Heat oven to 400°F (200°C).
- Pour about 1/4 cup of your chosen cooking oil (refined coconut or avocado oil recommended) into a large oven-safe skillet and warm over medium-high heat.
- In a shallow bowl, beat the egg and set aside.
- On a large plate, combine the almond flour, tapioca flour, brown rice flour, salt, pepper, and paprika. Leave space on the plate to work comfortably.
- Working one piece at a time, dip chicken into the egg, letting excess drip off, then fully coat in the flour mixture. Place coated pieces to the side until all chicken is prepared.
- Add the breaded chicken to the hot pan in a single layer, leaving space between pieces. Sear for about 2 minutes per side until golden and crispy.
- Transfer the skillet to the preheated oven and bake for about 10 minutes, or until the internal temperature reaches 165°F (74°C). If your skillet isn’t oven-safe, transfer seared pieces to a parchment-lined baking sheet.
- When done, remove the nuggets and set on a clean cloth or paper towel briefly to drain. Let cool slightly before serving.
