- 2 large Sweet Potatoes or Garnet Yams – 1-inch cubes
- 1 tsp Fresh Thyme Leaves, minced
- Salt & Fresh Ground Pepper
- 1/8 cup Pomegranate-Cranberry Juice (or pomegranate juice)
- 1/8 cup Orange Juice
- 2 tbsp Fruity Olive Oil
- 1 tbsp Apple Cider Vinegar
- 1 tbsp plus 1 tsp Honey
- 1/8 cup Pomegranate Seeds/Arils, for garnish
- Fresh Parmesan, shaved or crumbled, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Mince thyme and cube beets and sweet potatoes into 1–1½ inch pieces. Arrange beets on a baking sheet lined with a mat, drizzle with olive oil, season with salt and pepper, and sprinkle with minced thyme.
- On a separate baking sheet, arrange the sweet potato cubes, drizzle with olive oil, and season with salt and pepper.
- Place both trays in the oven and roast until fork-tender. Sweet potatoes usually take about 24–30 minutes; beets take about 40–45 minutes until lightly caramelized and easily pierced with a fork.
- Watch for doneness and remove each tray when the vegetables reach your preferred level of tenderness.
- While the vegetables roast, whisk together pomegranate juice, orange juice, olive oil, apple cider vinegar, honey, salt, and pepper until combined and slightly emulsified.
- Transfer roasted vegetables to a serving platter, drizzle with the orange–pomegranate sauce while warm, and garnish with fresh thyme leaves, pomegranate seeds, and shaved Parmesan if using. Serve immediately.
