Gluten-Free Vegan Banana Chocolate Chip Cookies
These vegan, gluten-free cookies are chewy, flavorful, and simple to prepare. Made in one bowl with everyday ingredients, they bake quickly into soft banana-scented cookies studded with chocolate chips.

Ingredients
- ⅓ cup mashed banana
- 3 tbsp melted vegan butter or melted coconut oil
- ½ tsp vanilla extract
- ⅓ cup granulated sugar
- ½ cup gluten-free 1-to-1 flour
- pinch cinnamon
- ¼ tsp baking soda
- 1 cup gluten-free old-fashioned rolled oats
- ⅓ cup vegan chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the mashed banana, melted vegan butter (or coconut oil), and vanilla. Stir until smooth.
- Add the sugar, gluten-free flour, cinnamon, baking soda, and oats. Stir until combined.
- Fold in the vegan chocolate chips.
- Using a large spoon, drop tablespoon-sized portions of dough onto the lined baking sheet. Gently press each mound into a cookie shape.
- Bake for 9–10 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the pan for 10 minutes, then transfer to a cooling rack to finish cooling.
