Cauliflower Crust Nacho Pizza Recipe — two game-day favorites combined into one delicious (and secretly healthy) pie!

Happy Wednesday! I’m interrupting your regular day-of-eating routine with something more exciting than my half-eaten bananas and salmon patties.

People often ask how I come up with my recipes. Mostly because they’re a little unusual — the polite term is “unique,” and the PC term is “weird.” I take it as a compliment. When I can’t decide between two foods, I combine them. Exhibit A: Nacho Pizza.

What’s more perfect for game day than nachos and pizza? Why choose one when you can eat both with one hand and avoid a melted-cheese catastrophe in your lap? Call me strange, but I prefer to cheer on football and critique commercials with clean hands.

I’ve tried plenty of cauliflower crusts. Most have been soggy, overloaded with cheese, or both. That’s why I fell in love with the Cauli-Crust from The Blooming Oven the first time I tried it. It passed my personal crust test:

Cauliflower Crust Nacho Pizza

Ingredients
- 1 Caveman Crust (or your favorite pizza crust/dough)
- ½ cup vegetarian refried beans
- ½ cup black beans
- ½ cup chopped tomatoes
- 1 fresh jalapeño pepper, sliced
- 1 cup shredded cheddar cheese
- 1 green onion, chopped
- Sour cream and guacamole, for serving (optional)
Instructions
- Preheat oven to 475°F (245°C).
- Warm the refried beans in a microwave-safe bowl for about 30 seconds, until heated through.
- Remove the pizza crust from its package and spread the warmed refried beans evenly over the surface.
- Top with black beans, chopped tomatoes, and jalapeño slices.
- Sprinkle the shredded cheddar over the toppings. Bake the pizza directly on the oven rack for 8–10 minutes, or until the crust is crispy and the cheese is melted.
- Let the pizza cool briefly, then sprinkle with chopped green onion.
- Slice and serve with sour cream and guacamole for dipping, if desired.
