Ingredients

  • ⅓ cup mashed banana
  • 3 tbsp melted vegan butter or melted coconut oil
  • ½ tsp vanilla extract
  • ⅓ cup granulated sugar
  • ½ cup gluten-free 1-to-1 flour
  • pinch cinnamon
  • ¼ tsp baking soda
  • 1 cup gluten-free old-fashioned rolled oats
  • ⅓ cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mashed banana, melted vegan butter (or coconut oil), and vanilla. Stir until smooth.
  3. Add the sugar, gluten-free flour, cinnamon, baking soda, and oats. Stir until combined.
  4. Fold in the vegan chocolate chips.
  5. Using a large spoon, drop tablespoon-sized portions of dough onto the lined baking sheet. Gently press each mound into a cookie shape.
  6. Bake for 9–10 minutes, or until the edges are lightly golden.
  7. Remove from the oven and let the cookies cool on the pan for 10 minutes, then transfer to a cooling rack to finish cooling.
